TASTING A WINE
Robe - Colour and Appearance
The appearance of wine may vary dependent on the grape variety used, production and ageing methods and the age of the wine itself. The first thing that you will notice when you look at a wine in the glass or hold it up to the light will be the overall shade. Nextly, take a look at how the colour varies towards the edge of the glass. A wine should never be hazy or cloudy as this can suggest various problems.
Some still wines, particularly those with high acidity and a low alcohol content, can show small bubbles in the bottom of the glass when first poured. This is rarely a bad sign. Some white wines may develop crystals of a simple salt called Calcium Tartrate which can resemble a white sediment. This is a natural occurrence and has no bearing on the quality of the wine. Sediment in red wine is equally common but resembles a black dust in the bottle or glass.
Again, this does not affect the wine or indicate problems.
Nose - Smell and Aroma
Inhale slowly from the glass of wine through your nose. A good wine will offer a broad range of scents, ranging from fruit flavours through to mineral or non-food aromas. (eg. Baked apples and caramel from an oaky Chardonnay or earthy truffles and leather from an old Pinot Noir).
Like the robe, the nose varies from wine to wine depending on many conditions. When identifying the aromas on the nose, simply pick what the smell reminds you of, rather than what you would expect. A smell of wet cabbage, bad eggs or vinegar can be an indication of a damaged wine.
Palate - Taste and Flavour
A good wine will show different flavours in the mouth to those on the nose. when first tasting the wine, swill a little around your mouth to cover your whole tongue and suck bubbles through it gently to give the liquid some air. As with the nose, simply imagine the flavours that are showing and enjoy what you find.
Finish - The Aftertaste
The finish of a wine is the flavour and feeling that the wine leaves you with when it is no longer in your mouth. With a full-bodied red, this may leave a dry sensation from the tannin in the wine. With a dry white, the finish may be sharp and crisp. Most top wines will have a long, lingering finish that continues to develop more flavours long after you have swallowed or spat out the wine.
